Gungo peas’ soup or green beans soup
Many Jamaicans favor cooking soup for Saturday’s dinner; than cooking hard food, green beans soup is delicious; good source of dietary fiber. Gungo peas’ soup or green beans soup tastes best cooked with cow’s tripe, along beef.
GUNGO PEAS, GREEN BEANS SOUP
Ingredients:
· 1 pound soup meat, mixed with beef ½ pound beef, or corned beef, corned pork (cut both meats in chunks | pressure-cook for 15 minutes)
· ½ pound cow's tripe - optional
· ¼ pound of chicken foot - optional
· 1 pint or 1 pound of gungo peas, green beans (dried or green)
· 2 stacks of scallions (whole), Jamaican do not use onion in soups,
· 1 ripe pepper (scotch bonnet) (whole)
· 2 tablespoons of sea salt
· 1 tablespoon of parsley (dried or fresh)
· 1 tablespoon of basil (dried or fresh)
· 1 teaspoon of marjoram (dried or fresh)
· 6 garlic cloves (mashed)
· 4 pieces of whole cloves
· ½ tablespoon rosemary (whole if fresh) (dried diced fine) (optional)
· 1 teaspoon of pimento berries (dried)
· Thyme (tie to two fingers)
· 1 tablespoon white vinegar and 1 tablespoon to wash the meat)
· 1 60g pack chicken noodles (not cock soup - important!)
· 2 carrots (diced)
· 1 pound of pumpkin (cut to half your palm, peel off skin, do not use the pumpkin's skin in the soup)
· ½ pound of Irish potato - optional
· 1 pound of yellow yam
· 1 tablespoon coconut oil (or olive oil)
· 12 cups of waters
